Configuring high and low season depends on your needs.
If you simply want to apply different prices between high and low season, you don't need to do anything special - just enter the prices directly in the calendar.
If instead you want to apply different cancellation rules depending on the period (for example: more flexible in low season, stricter in high season), you need to follow these steps:
Create cancellation policies
Go to: Settings → Automatic payments and sales conditions
Configure the different policies

Create rate plans
Go to: Rooms/apartments → Rate plans
Create a plan for each season

Connect everything together
In each rate plan, associate the corresponding cancellation policy
Specify the date range for that season
Consider the "rate plan cross"
Consider whether to activate it to allow bookings that start in one season and end in another
